Dietician and nutrition lecturer Dr Andrea Fuller from the University of Southern Queensland highlights the challenge of balancing nutrition with children’s willingness to eat. To aid parents, she suggests these five appetising strategies for making school lunches more appealing.

First, consider simplifying lunch box items into smaller, bite-sized portions. Large sandwiches and whole fruits can be overwhelming for kids. Instead, offer a variety of smaller snacks that are not only visually appealing but also easier to consume. Options like boiled eggs, sliced apples (with lemon juice to prevent browning), and veggie sticks with dip can make lunchtime more enjoyable. Additionally, homemade snacks such as pork and cabbage dimmies provide protein in a fun, easy-to-eat format.

Another great idea is to involve children in the lunch-making process. Having a selection of ingredients available lets kids choose what they’d like to pack. This increases the chances they will eat what’s included in their lunch. Dr Fuller recommends making activities like rolling cauli chicken rissoles together or creating meatballs as a fun way for kids to participate in meal preparation.

To ensure food safety, it’s important to pack items like cheese, yoghurt, meats, and salads in insulated lunch boxes, accompanied by a frozen drink bottle or ice pack to keep things cool. For something sweet, home-made options such as puffy plum muffins and wholesome muesli bars made with seeds and honey are ideal for satisfying a sweet tooth while being nutritious.

Dr Fuller notes that while nut-based recipes can be delicious, parents should verify their school’s policies on allergens to ensure the safety of all students.

It’s vital for parents to remember that lunch box contents should cater to each child’s preferences and dietary needs, while providing wholesome nutrition to support their learning and development. Creating a fun, varied, and healthy lunch experience can encourage kids to eat better and enjoy their meals.
