Their practical approach to living simply has provided them with the ability to contribute meaningfully to society. Jon explains how their low-consumption lifestyle has enriched their lives, stating, “Living simply and inexpensively has given us the opportunity to give far more and do more good.” The couple, who have paid off their mortgage, enjoy the flexibility of part-time work, earning around $190,000 annually through casual teaching and engineering roles. This allows them to manage their time according to their choices rather than obligations.

A significant part of their savings comes from their unique approach to food procurement. The Watsons engage in dumpster diving at local supermarkets, where they retrieve discarded, perfectly edible food. This practice has helped them save between $7,000 and $10,000 a year on groceries, allowing them to spend as little as $40 weekly on extra essentials. Jon shared that they often go without spending any money for weeks, as they continuously find ample food resources.

Through their consistent efforts, they have witnessed the shocking amount of food waste that occurs, with supermarkets routinely discarding items that are either past their expiry dates or deemed imperfect. Emelie mentions that the quality and quantity of food they recover are often surprising to others. Remarkably, they feel their diet is healthier than what they would typically consume.

The couple maintains a respectful and safe approach to dumpster diving, acknowledging the scrutiny around it. They are aware of the supermarkets’ health and safety concerns but believe the rewards of salvaging food outweigh the potential risks. Jon highlights the resources wasted from excessive concern for safety, advocating for a balance between caution and need.

Beyond food, their sustainable lifestyle incorporates cycling instead of driving, relying on a vegetable garden, and utilising solar panels for energy. They aim to diminish their reliance on costly resources while fostering a more sustainable existence. In 2024, they further showcased their commitment to community by donating over $47,500 to various charitable organisations addressing healthcare, food insecurity, and education.
